It’s a SERIOUSLY?! Kinda day

You know when you make a SERIOUS plan for that day and your goal is to get everything done, and then SURPRISE its 5 O’clock and you got nothing done besides sitting on your butt?? Well If you don’t I’m honestly quit jealous.. or your just not being very truthful. Let me explain.. My list was as follows:
– Gym
– make breakfast
– clean house
– go to my moms house for a bit
– get pig food
– work horses/take 2 month baby pictures
– hubby was going to clean yard

Did any of this happen?? NO. Lets get real.. I woke up at 7:45 plenty of time to have a successful day right?? NOPE. Wrong.. I made my husband coffee, sat on my bottom, watched a movie with hubby, coddled fussy child, sat on my bottom some more, watched some tv, and then realized it was already 2:15 pm. Well there goes the gym (closes at 3 on Saturdays). Then We decide to in order to get the rest of the plans done, which included:
-working horses
-dragging the yard
Only one of those got done: as you can see which one. (My husband is being a doll dragging the yard)

My excuse? PARENTHOOD.. Yup.. Our little one screamed bloody murder for over an hour as I tried repeatedly to lay him down while limbo-ing the computer to do something, and ALSO trying to at least clean up the kitchen.. can I say NOPE, NOPE, NOPE. Nehemiah decided my day would end with him in my arms, you guessed it sucking on the boob for comfort. Sooo… for you mom’s/ dad’s out there, have you had one of those SERIOUSLY?! Kind of days.. when time just fly’s by and you don’t know what the heaby jeaby’s happened!? 🙂

Hubby’s Perspective 5 key points he learned during pregnancy

So.. ur pregnant.. CONGRADULATIONS!! Now lets get real here, often times when the woman gets pregnant hubby/boyfriend/spouse gets put on the back burner.. I know I know.. I mean WE ARE the ones pushing a 7.. no 8.. no 9.. no maybe even 10 pound little one out our whoo hahs so really… I mean REAAALLLLLY does it matter if they’re put to the side a whee bit??

To be honest YES, the man is just as important in this journey as YOU ARE. I mean really you made this little one together didn’t you?? He’s ultimately the one who is going to be they’re threw the random crying sprees and every un-glamorous thing you didn’t even know about (don’t worry I’ll cover that on a later post) so for you guys out there I sat down and asked my Mr. what he didn’t realize would happen during my pregnancy.. SPOILER.. it wasn’t as bad as I thought it would be!!

OK.. so in the movies they usually talk about ridiculous vomiting, crazy mood swings, cravings that knock him out of bed at 3 am, lack of sexual interest, and hair loss right?? These are five things he originally expected… But low and behold 5 things he didn’t expect..

1. She didnt wake me up or make me go get her food like I thought she would.. like what you watch in the movies, her cravings were actually pretty manageable.. some of them were still pretty gross though.. like raw onions. (Yes I know quite gross, but for some reason the last trimester I wanted to chomp on that they’re onion.. RAW)
2. NO ONE mentions that your going to fart more.. annnnddd so he was faced with the hard truth of me ripping some major butt puffs that NEITHER of us enjoyed.
3. Another thing no one mentions.. both DURING pregnancy and AFTER, your hormones are raging like crazy, therefore you SWEAT like an olympic athlete which again.. not so fun. can I say EWW?? say hello to 2 showers a day.. XD
4. You know how you watch those preggers movies and the girl is screaming at her husband while stuffing her face with a twinky and then 5 minutes later balling her eyes out begging for forgiveness?? Well According to hubby those movies re dramatized.. Although don’t worry I totally balled my eyes out randomly he said it was not nearly as bad as he was expecting.. Yay me!!

5. Ahhh SEX its what got you into these “Shenanigan’s” Right?? Don’t kid yourself.. its what happens when you do the NAST..AY. Anyways Personally our sex life didnt really change, even when I felt like a beached whale toward the end of pregnancy.. sex was well.. sexay as usual. =)

I will say I feel like the pregnancy was ALOT worse than what he remembers, but I guess that’s to be expected.. as a little secret.. your man’s t-shirts and jackets are WAY more comfortable than your own. 😉

AND as a last thought.. you men out they’re this was my hubby and I’s experience I have to say every pregnancy and individual is different.. but definately expect you shirts and sweaters to be stolen (It’s a comfort thing).. just remember support your boo threw the rough and the great.. It will all be WAY worth it in the end. 🙂

Bomb Diggity Meatloaf

Weekly meal prep is a must in my house. It’s especially nice when you can grab something already cooked and ready to go from the freezer and pop it in the microwave after a long day, am I right?
Meal prep is awesome but despite what people think about always having oven baked or grilled chicken my taste buds get bored easily. I do like to be healthy, but healthy doesnt have to be gross in my cookbook. So I came up with this healthier version of meatloaf on those days you just need something different.
Okie dokie lets get started!!
– 2 pounds ground meat of choice
– 3 cups of organic oats
– 1/2 diced onion
-2 heaping tablespoons spicy mustard
-1/2 a cup of ketchup
– good dousing of garlic salt
-good dousing of pepper
– 2 large eggs
– (optional) diced tomato pieces
Set that oven to 375* F, and grab a good sized mixing bowl. Throw all ingredients into the bowl and really get in there and get those hands dirty! After you have mixed everything together mold into the shape your looking to have and toss into the oven for about 45 minutes.
As you can see I did mine in mini versions, which I was able to make 12 of with enough for a mini meatloaf I will be cutting into slivers for meatloaf sandwiches!
 
(As an after thought the mini meatloaf’s would be perfect as stuffed bell peppers!!)
After you take them out of the oven allow to cool and enjoy!!

GO to Minion Chocolates

Who doesn’t love minions? They are the cutest little creatures that both adults and kids LOVE! So what better chocolate to make than a minions homemade “Reese’s” cup thats actually pretty healthy for you. As long as you don’t eat all of them… although they are so scrumptious I wouldn’t blame you if you did! This is another super easy recipe that you can make in advance and keep in the fridge as a go to snack.

The dark chocolate provides relief for those of you out there on a health kick but wanting a candy bar along with added protein from the almond butter/ peanut butter. This is also a great treat for the kiddos when they get done with chores and you want to give them something sweet that isn’t super high in sugar.

Okie dokie.. so for the “Minion mold” I personally got mine from stater brothers with a few boxes of jello, but if stater’s doesn’t have the molds good news is I also found them on amazon.. just type in “Minion chocolate mold”

This is the set that I got from stater brother’s:

Besides the minion mold you will also need:

  • coconut oil
  • dark melting chocolate
  • 1 cup peanut butter or almond butter to start

At this time add the chocolate to a bowl with about a tbsp of coconut oil and heat in the microwave. I would start out with 1 minute 30 seconds, take it out and stir with a spatula then continue for about 30 seconds till the chocolate is nice and melted. If you need to add a little more coconut oil to make it nice and smooth that’s fine.

When your chocolate is nice and smooth use a large spoon to drizzle the first layer into the mold. Make sure to poor a generous amount that covers the bottom half of the mold. When you fill your molds go ahead and stick them in the freezer for 5 minutes

While the molds are cooling I like to heat p the peanut butter/almond butter, so its just as easy to poor into the molds and it doesnt end up clumped more in one section. Take the molds out of the freezer and drizzle the desired amount of peanut butter or any other nut butter over the cooled chocolate. Then right on top of the peanut butter add the last layer of chocolate (You may need to re-heat it). Let it cool in the freezer for at least 20 minutes before popping out of the molds!!

Annnnddd there you have it… you end up with these Scrum-Ditilly-Umptious chocolate bars.. Are they not ADORABLE?!

Easy Peesy Breakfast Sandwiches

Are you tired of spending a ton of money on those jimmy dean breakfast sandwiches with the fake cheese? I mean yah they taste great but what if you could have something for half the cost when its all said and done? Just as ready every morning for you busy bodies who need a quick breakfast for yourself and your family?? Well I got you covered!! These are my easy peezy frozen breakfast sandwiches.

Ok! lets get started.. go ahead and grab your grocery list!

  • 16 eggs
  • 1 package of sausage or bacon (whatever is your preference)
  • 2 packages of sandwich cheese of choice
  • salt and pepper for taste ( I used garlic salt and lemon pepper)
  • Coconut oil
  • English muffins
  • Any other toppings of choice (tomatoes, bell peppers, spinach, etc)

OK ladies and gents.. go ahead and grab your trusty muffin pan and some Ziploc baggies.  lets get this show on the rode.

Grab your most trusty pan to fry up that sausage or bacon. When you get done cooking that set aside and let it cool. I would place it on a plate with a paper towl to soak up the extra oil, and if your like me you have an extra mug to poor the excess oil in for later recipe’s.

Next set your oven to 375* F.  While were waiting for your oven to heat up I usually set up all the English muffins with cheese so I can throw the sandwiches together when the eggs are done. OK so the sausage/bacon is done and cooled down and the muffins are set up right? Awesome! Lets get the eggs ready.

Grab your trusty muffin tin and line it with the coconut oil. Crack each of the eggs in your pan (if you would like you can beat them to make a scramble) and add the ingredients of choice. Also at this time I would add in chunks of bacon or sausage. add in your seasonings such as the salt and pepper and your all ready to go.

Is that oven nice and warm? Cool, lets toss our pan in there and let it cook for about 30 mins. When it comes out I would let it cool for about 10 minutes or so and then throw it onto the prepared muffins. You can let it sit for a couple minutes to let the cheese melt or just throw the sandwiches together and put them in the Ziploc baggies. At this time all that’s left to do is enjoy on your most busy morning’s, all you need is a minute and 30 seconds for a nice warm and delicious breakfast… And don’t forget the coffee to go!!

Migraines. How can you fight them?

If you read my previous post on “How I live with migraines” you are now aware of some preventatives out there for migraines/headaches. But what happens when you still have an episode or end up getting a migraine despite your best efforts?

Well I’m here to tell you what works for me. Because if your like me you don’t want to sit there all day yanking out your hair in a dark room with no sound.

Most of the time I end up at the worst being able to cope with the pain and at the best getting rid of one as fast as it comes. The first step is recognizing your symptoms of when a migraine/headache is starting. For example in my case I begin to get a sore neck, pain behind my eyes, and numbness in my face. At this time my first step is taking 2 magnesium oxide pills to try and counter act it along with drinking at least 20 oz of water immediately.

If it continues to progress I always make sure to have Lavender oil on hand as well as peppermint oil.  I rub a couple drops on my temples and back of my neck, massaging it into the muscles. I would suggest laying down for about thirty minutes and just letting your body relax along with drinking more water. i say this because I made the mistake of walking around after putting the peppermint on ending up with really watery eyes.

If the pain still continues I would suggest drinking something high in caffeine such as plane coffee, but if your like me plain coffee is not an option. So quickly drinking a Dr. pepper or something else works as well.

I also will take a shower, bending my head under the flow of the water. I switch the water back and forth between extremely cold and extremely hot. This causes the blood vessels to expand and contract allowing for increased blood flow which is said to help alleviate the pain.

I also will get an adjustment from my chiropractor as well as a massage to relax the muscles.

If you catch it fast enough though you shouldn’t have to go threw all of these steps. The best advise I can give also in this situation is getting the rest you need, drinking enough water, and remembering to eat. I hope this helps those of you out there who are like me and suffer from migraines/headaches. This is again what seems to work for me, and depending on how quickly I catch it as well depends on the amount of steps I have to take.

Healthy Protein Pancakes

Howdy gentlemen and ladies!! How many of you out there are like me trying to stay on a healthy path and love sweets? I’m talking about pancakes, waffles, cinnamon rolls, etc?? Yes I know all these foods are delicious! just not when your trying to stay away from unhealthy fats and carbs, well I have a recipe for you for healthy pancakes that also pack 15g of protein and are only 4 ingredients!!

Now as a little backing, I know there are quite a few recipes out there for the banana pancake with 2 ingredients.  After trying this several times with the result ending up a blob pile of banana mash I decided to try a few different things to get a better result closer to real pancakes!! I’m sure everyone else has unfortunately had this result as well. I mean lets be honest, how can you get fluffy pancakes with mush??

Now I will say these pancakes are fairly fluffy but if your cup of tea is serious fluffiness I will be experimenting with adding some oat flower and a pinch of baking powder, but for now this weekend I came up with these little delicious gems!

I know.. dont these look delicious!! As you can see in the picture I used coconut oil (winco for $12!!) but Im sure olive oil, butter, etc would work just as well.

Ok lets get started!! You will need a blender/food processor (I used the magic bullet because its cheap on amazon and works great for single servings). Having a blender makes this recipe much easier and gives the batter a smooth consistency that’s hard to get when working with bananas, as Im sure your aware.

You may need a sptaula to scrape the sides if it gets to goopy or stuck.

This is for a single serve batch of pancakes, but if you have multiple people to cook for I’m sure you can double the recipe or so on and so forth depending on the amount of people. =D

I included pictures of specific ingredients and were I got them below.

  • 2 tbsp brewers yeast (also helps with improving lactation for you nursing moms) I got mine from amazon for about $12 and it has lasted me awhile. I use this in a lot of my recipes now because I’ve noticed it improves the fluffiness and way that things rise in my opinion. The brewers yeast also contains 7g of protein per a 2 tbsp!!

  • 2 tbsp ground flax seed. This miracle ingredient as I’m sure your aware contains crucial omega 3’s our body needs and contains 2g of protein per a 2 tbsp. I got mine from Walmart were the vitamins are and it was $3 for the bag. Which again this has now lasted me many many recipes. The flax also naturally promotes lactation for nursing moms *still safe for people not nursing* ;D

  • You will also need 1 large egg
  • 1 tsp cinnamon
  • If you want a sweet syrup to finish I used agave nectar or honey drizzled on top. The agave nectar I also got from Winco, and I noticed its actually cheaper than honey, so I have begun using it in a lot of my sweet recipes.

Ok!! Thats it. Now for the fun part. Throw all the ingredients in a blender of choice and mix together. Again you may need a spatula to scrape the sides, and it may take a few minutes to blend up nice and smooth. It should end up looking like cake batter. After then grab your favorite pan, warm it up and add an oil of choice to make sure these beauties don’t stick funny and turn into a gross goop..

After you have the pan nice and warm with the oil in it add the desired amount of however big you want your pancakes to be. I personally like mini pancake, but there should be enough batter to make at least 2 maybe 3 bigger ones if that’s more your style. When they have bubbled up a little bit and you can move them with the spatula (I added more oil and shook the pan to slide them around) go ahead and flip these babies!! A couple more minutes on this side and you should be good to add them to a plate.

       

After adding to a plate you can add some toppings if you would like. A few I thought about after the fact is vanilla greek yogurt, honey, agave nectar, or even fresh berries and nuts. Do these not look wonderful?! I hope you enjoy them and stay tooned for me trying out a few different options to make them even more fluffy. =D <3

Migraines and how I live with them

What are migraines? Honestly this magical word I would not wish on my worst enemy, and if you have experienced a migraine headache or severe headache I’m sure you feel the same way.

Migraines are one of the most common headaches but also paired with the joy of impaired or spotted vision, nauseousness, and sensitivity to light. Other symptoms may be present depending on the person. Such as for myself I get to have a bright flashing light in one of my eyes, feeling extremely hot or feverish, and a pounding in my head that leads to a severe sensitivity to light. This has also lead to an inability to function depending how bad the migraine I’m having is.

For myself I had the displeasure of having my first migraine when I was 8 years old… YES! Just 8!! I bet your thinking.. there’s NO WAY! But let me tell you, yes way.

I’ll never forget the first time my vision pretty much completely disappeared on Easter Sunday. We were at a family gathering celebrating the holiday. While all the other kids got to enjoy hunting for Easter eggs I was stuck laying on a blanket under a coffee table with a bowl glued to my side and a cold water bottle pressed against my clammy and pounding head. Being only 8 years old I was terrified I was dying.

Not so fun right?

Definitely not! But here’s the news… I didnt die! 😀

Although it was extremely painful my mom new what was going on (Migraines run in our family) and so my journey of living with migraines began. It took me years, and I mean years to find something that worked in my situation. I took several different medications all of which if they did do anything would help in that moment but cause a recurring migraines.

I also tried the new hype of whats called a “Daith piercing” that is said to trigger a specific pressure point (used in acupuncture) that can help migraine sufferers. The piercing itself was extremely painful, and although I left it in for several months I did not see any progress in the amount of migraines I was having.

At this point I was extremely discouraged, thinking I would be stuck with a pain that would leave me missing out on things I loved to do when one would come along. I myself was having at least 1-2 migraines a week, and sometimes they would continue for several days.

After years of living with them and just learning to cope with them I recieved the happy news of being pregnant. At the time I was working at a desk job and thought nothing of it, but as my pregnancy progressed my migraines began to come more often. Instead of the usual 1-2 migraines a week, it turned into 4-5. My life was a blur of pain and misery. I was no longer able to function at work and was unable to take any medication due to my pregnancy.

I know.. it seems quite pitiful.. but I promise it gets better!

After dealing with this for a few months I decided to meet with a neurologist what I could do while being pregnant. This leads me to the 2 magic pills I take daily to combat my migraines. Now I have to say, this is what works for me, but if it comes down to it its worth a try right?

The first is MAGNESIUM OXCIDE which is an important mineral for the proper function of bone health, proper heart function, supporting a healthy immune system, etc. It is also the fourth most plentiful mineral in the human body. How does magnesium help you might ask? Well in several studies it has been shown that migraine sufferers may have a low amount of magnesium  therefore leading to a natural preventative or way to combat migraines. I myself take two 400mg tablets daily, and while I do still sometimes have migraines still my number has decreased to about 2 a MONTH. Whereas before as you know I was having several a week. I call that a WIN!!

The next thing that has helped my migraines is VITAMIN B2 also known as riboflavin. This vitamin is one of the 8 important vitamins for the body which help to convert food into fuel. These vitamins are responsible for healthy liver, eyes, skin, and help the nervous system function properly. Studies have suggested that this vitamin can help to reduce the frequency as well as how long a persons migraines occur. I myself take one tablet daily to help with my migraines.

Now I do want to say again this is what has helped me to be able to live with my migraines. I havnt had the miracle of getting rid of them completely, but these two vitamins paired with a healthy diet and excercise has helped me tremendously. I would highly suggest trying this if you are a migraine sufferer like myself. I hope it helps you as much as it has helped me!!

Lactation Mug Brownie!

DOES THIS NOT LOOK YUMMY?!?!

Ok guys, I dont know about you but being a new mother and breast feeding I’m always worried about  if I’m producing enough milk for my son Nehemiah. I have resorted to pumping threw-out the day and bottle feeding him what I pump to truly see not only how much I am producing but how much he eats, and sense he does not complain at night letting him get it straight from the tap. ;p

I chose to do this for myself because for about a week he began getting extremely fussy leaving me to hold him all day and not get the things done I wanted to, such as cleaning the house. Which is a super important thing to do because my husband works and we have three big shedding German shepherds. This can put a damper on my house as their fur balls tend to develop their own personal vendetta against our air quality!

Anyways.. sense Nemo was having a few fussy days I began to be concerned about what I was producing, and after confirming this while pumping hardly anything I did some research. Now the only thing my research told me was how expensive lactation products are including tea, cookies, bars, etc. So this brings me to making my own yummy products.

I wanted to stay as healthy as possible while also getting my sweet fix but I will say you can get the ingredients from any store, they Do not have to be organic.

I have a few different recipes to promote healthy lactation (paired with consistent pumping threw- out the day) but to start this is my 5 minute brownie mug cake. I love this cake because its the perfect amount of fluffiness and sweetness to get my fix while providing protein for a snack or a yummy dessert. I do have to say this is not just for lactation but a healthy dessert alternative for ANYONE who loves chocolate!! I hope you enjoy!

Cake:

1 large mug

1 extra ripe bannana

1 tbsp cocoa powder

1 egg

1/4 cup ground oats (oat flower)

1 tbsp ground flax (I got mine from walmart)

1 tsp Brewers Yeast (I got mine from amazon)

1 tsp cinnamon

small handful of 64% cocoa choc chips

Ok, this is when it gets fun.. mix all ingredients but the chips in the mug with a fork, fold all ingredients together and then add the chocolate chips. Microwave on high for 1 min. Check the consistency and add another minute if needed. If you would like a chocolate syrup I made a healthy version:

1 tbsp raw organic honey, or agave nectar

1 tbsp cocoa powder

1 tbsp almond milk… microwave a few seconds and mix together. poor over cake for added sweetness.

And there you have it!! A wonderful healthy alternative to a candy bar that promotes lactation. How does it do this might you ask? Well upon doing research they’re are a few ingredients in this recipe that promote lactation: Bananas, Brewers yeast, flax, and oats. Thats it!! The “Nitty Gritty” Parenthood Ramble

Ahhh parent hood.. Such a wonderful blessing and miracle of life, isnt it? Just the fact a woman has the ability to push a human being out of her who hah is amazing in itself. ;D .. not to mention how far technology has come to provide other means of bringing life into this world as well!! am I right?

In all seriousness though, what does it really take to be a parent? what is the “Nitty Gritty” of being a parent?  Simply put being a parent includes sacrifice. You are now responsible for a life.. pretty scary right? Take a breath its ok… you can stop pulling out your hair.  Although sacrifice includes lack of sleep, constant cold meals (which includes shoveling food down as if your in an eating competition), and a wheel barrows full of poopy diapers…

WHAT IS THE NITTY GRITTY OF PARENTHOOD?

Well being a parent is looking at the life you just brought into this world and experiencing the most amazing form of love you could ever feel. It is truly an unexplainable miracle of crashing emotions. Emotions that include: Love (of course), fear, strength, determination, expectation… need I go on?? I didn’t think so…

Parenthood is waking up at 2..3…and 4 o’clock in the morning rubbing your eyes while changing a nasty blown out diaper wondering how the hell he/she could have accomplished such a blow out with a liquid diet of milk… no matter how healthy or shitty you eat.. I mean COME ON!!

Parenthood is for you women out there breast feeding… waking up countless times to simply shove your boob in his/her face so you can just get some shut eye while they’re eating, but then sadly jerking awake as they chomp on your nipple, And for you mamas/daddy’s feeding formula (I seriously commend you) waking up every couple hours to make a bottle.

Being a parent is walking in the other room to cry and scream in a pillow as your little one screams in the background and you have tried everything to comfort them… Its OK!!

See know one explains what being a parent really is the trials and tribulations you really go threw… because lets get real, it sure in the hell is not always this:

I think we can all agree the “Nitty Gritty” of parenthood is alot.. I mean I have literally only been a mother for six weeks now and the amount of effort it takes to be a parent is crazy. But that brings me to the next “Nitty Gritty” of parenthood:

IS IT OK TO LEAVE YOUR NEWBORN/INFANT?

YES! YES! YES! No matter what anyone tells you, wether you are a single mother/father, married, in a relationship, step parent, etc it is extremely important to know you CAN take a moment to yourself.

I know I know its hard, especially if they are a newborn, being a mother to a newborn myself it is extremely difficult to leave him. But it is extremely important for new parents and even parents with older children to not only have a moment to themselves (I call it the “Me Refreshment Time”)  you need time with friends, and if you have a spouse your relationship needs nurturing as much as your child!!

IT doesnt have to cost anything, just asking someone to watch baby/child while you have friends for dinner, go for a walk, have a self dance party (YES blare the music and shake all the stress of parenthood away). Believe me… It makes your JOB (Yes parenthood IS a JOB) soooo much easier..  (You can thank me later).

So the nitty gritty of parenthood is there is ALOT that goes into it including sleepless nights, some serious diaper duty, some days of both you and child crying, but also pure bliss and love… Just dont forget to give yourself some credit.. YOUR DOING GREAT… Give yourself a moment… and come back feeling refreshed. If all else fails LAUGH it off.. and PRAY for courage, strength, and guidance. <3<3<3<3
